An Intimate Experience, Guided by Wine

At Le Salle Dining, everything you experience — from the first pour to the final bite — is created by just two people: one chef (Patrick Dang) and one Maître D' (Ederlyn Oloresisimo) We work closely, intentionally, and with care to bring you a dining experience that feels personal, thoughtful, and unlike anything else in Sydney.

We don’t turn tables. We don’t rush. Each service is designed to unfold slowly and naturally — allowing you to truly settle in, enjoy each course, and let the evening take its shape.

Our Menus

We offer two tasting menus: We Cater for most dietary requirements. Except Vegan & FODMAP.

  • A Five-Course Menu $158/person

  • A Seven-Course Menu $178/person

  • A Le Salle Experience Multi-Course Menu $250/person

A Structural Tasting Journey

Our tasting menu changes weekly according to season and availability. Rather than fixed pairings, we follow a structural progression — an arc that moves naturally from brightness and tension through texture, lift, and depth. This approach allows freedom without losing precision. For guests seeking an intimate tasting menu in Sydney, the experience is guided, calm, and considered.

Our Wines

We don’t pour from the bottom shelf. Our wine list by the glass leans toward above-average selections, often sourced from small producers, aged bottles, or lesser-seen regions. We aim to serve wines you don’t usually find by the glass, especially in casual settings.

Most of our pours come from magnum format — large bottles that offer a unique character and aging profile. It’s a detail that adds depth to your experience and allows us to share wine in a more generous, expressive way.

Our Style of Cooking

The food is rooted in European tradition — confident, clean, and carefully balanced. We don’t aim for theatrics. We aim for soul. We let the ingredients speak, and we give each course the space it needs to land.

We believe in slow dining. In intention over speed. In doing a few things with great care.
