At the heart of Le Salle Dining is a passionate duo. Chef Patrick Dang’s career is studded with high-impact roles across Australia, Asia, and North America. His consulting work includes a period as Executive Chef for Coombe Yarra Valley, a prestigious estate once home to Dame Nellie Melba, where Chef Dang led menu innovation, elevated the dining experience, and collaborated with celebrated local wineries. Known for his culinary showmanship, he also served as a demo chef for Canadian Beef, where he staged live cooking events that highlighted the natural richness of Canadian pasture-raised beef.
Among his proudest ventures is Saam Bar & Eatery in Hong Kong, where he applied his experimental approach to create a space that celebrated the latest in culinary advancements and cutting-edge techniques. Each month, he crafted unique, thematic tasting menus that captivated diners and kept Saam at the forefront of Hong Kong’s dining scene.
Chef Dang’s leadership extends to top positions at world-renowned restaurants and hotels, including the Mandarin Oriental in Hong Kong, T8 Restaurant & Bar in Shanghai, and The Tides South Beach in Miami. His work has earned distinguished honors, such as a Chef Hat rating from the Age Good Food Guide and recognition from Condé Nast as one of the “Top 50 Hottest Restaurants” for his work at T8. As a corporate executive chef in Hong Kong, he orchestrated entire culinary operations, instilling the highest standards of consistency and creativity.
Through each role, Chef Patrick Dang has remained an uncompromising force, shaping every kitchen he enters with vision, integrity, and an unparalleled commitment to culinary excellence. His career continues to be one of inspired leadership and a testament to the transformative power of food. Returning to his hometown where his culinary journey began.
Le Salle Dining is a partnership between Chef Patrick Dang and Ederlyn Oloresisimo, who brings her experience from Vue de Monde and Society Restaurant in Melbourne, along with a role at Firedoor in Sydney. Together, they curate a dining experience that celebrates seasonal ingredients, intentional pacing, and exceptional wine pairings—hallmarks of the Le Salle philosophy.
