ABOUT LE SALLE DINING

Le Salle Dining by Bar Chaplin is a 12-seat dining room on Hutchinson Street in Surry Hills, run entirely by two people: Chef Patrick Dang and Ederlyn Oloresisimo. Patrick has spent 30 years cooking across Australia, Asia, and North America — in kitchens including Mandarin Oriental Hong Kong, T8 Shanghai, and properties in Miami and Melbourne. He earned a Chef Hat from The Age Good Food Guide and was included in Condé Nast Traveler’s Top 50 Hottest Restaurants for his work at T8. He has cooked alongside Gordon Ramsay and Luke Mangan. He chose to come home and cook for 12 people a night.

Ederlyn brings the floor experience of Vue de Monde, Firedoor, and Society Restaurant. She runs the room with the precision of a fine diner and the warmth of someone who genuinely wants you to have the best night of your year. Together they created Le Salle — not to impress, but to connect. The name means “the room” in French. The inspiration is Charlie Chaplin, who believed simplicity is not a simple thing, and that you don’t need words when the work speaks for itself. You’ll find us tucked behind a gauze curtain at 1/18 Hutchinson Street. Look for the Chaplin hat on the window.
